Rokurinsha

Other shops in Tokyo Ramen Street come and go, but Rokurinsha’s legendary tsukemen continues to draw crowds to their shop. One slurp and you’ll understand why.

It’s hard to imagine a time when tsukemen - noodles served with a concentrated ramen dipping broth - weren’t popular. But this is Rokurinsha’s partial claim to fame: bringing tsukemen to the masses and popularizing this style of ramen in the mid-2000s.

Now, of course, tsukemen is everywhere - but Rokurinsha’s version is still beloved by ramen fans everywhere. The constant queues at their outlet in Tokyo Ramen Street in Tokyo Station certainly attest to that.

The noodles are wide, curly, and have a marvelous chewy consistency. It’s a perfect vehicle for the dipping broth that comes with it - a thick, creamy pork bone broth blended with chicken bones, baby sardines, smoked fish flakes, and vegetables. It’s topped with fish powder, which adds an additional shot of umami to the whole mix.

Go for the tokusei, which gives you toppings like seaweed, chashu pork, a whole egg, and additional pork. When you’re done with your noodles, you’ll have some broth poured into the remainder of your dipping sauce to dilute it and make a delicious drinkable soup.

Is it worth queuing for? The hype is real, and ramen turnover tends to be fast anyway - so it all depends on how much you love your tsukemen. You decide.
