Not all ramen is created equal. Chukasoba Kazura in Awaza serves up a shoyu chicken ramen with a fabulously light and mousse-like soup that’s a cut above the rest. Look for the kanji 葛 on the sign. You may have to queue with the locals, but it’ll be worth it.

Ramen comes in all shapes and forms, and ranking ramen restaurants is pretty much a full-time job for any food critic. Luckily, most of them tend to agree on the great places. Chukasoba Kazura in Awaza is a firm favorite with Osakan locals, as evidenced by a permanent queue outside the door. It’s a small joint and turnover is fast, so you won’t be kept waiting long.
Like the best shops, the menu is extremely limited. If it’s your first time, you’ll want to try the dashi soba - chewy noodles, thick slices of pork chashu, half of a marinated egg, and green onions. The broth is the star of the show here. This blend of chicken broth and soy sauce tare is far lighter than you would imagine. They’ve thermo-whipped it into a foamy emulsion that’s creamy and light, rather than being heavy and greasy - almost like a chicken ramen latte. At just JPY700, it’s a real steal of a meal.
Extra-hungry folks should also order a roast pork rice bowl alongside. It’s exactly like it sounds, except that there’s an exquisite basil-infused sauce poured over the whole thing.
